The perfect cheesy scone recipe

If you love cheesy scones, this one's for you…
Author, story-teller and recipe developer Karen Burns recently created the perfect cheese scone recipe using our new traditionally fermented kefir.
A great alternative to buttermilk or yoghurt that gives them a lovely light texture and tang.
INGREDIENTS
* 450g self raising flour
* 1 teaspoon English mustard powder
* 50g butter, cut into small pieces
* 2 teaspoons bicarbonate of soda
* 225g grated mature cheddar cheese (plus extra for topping)
* 300ml kefir (I used Fen Farm Dairy kefir)
* salt to taste
INSTRUCTIONS
- Pre-heat oven to 225C/450F/Gas mark 8. Line a large baking sheet with baking paper.
- Rub the butter into the flour until it resembles breadcrumbs then add the mustard powder, grated cheese and bicarbonate of soda. Mix well before pouring the kefir in. Mix until it is soft and sticky, then turn out onto a well floured board.
- Gently push the dough down into a big square with floured hands, don’t handle it too much, then stamp out 8 to 10 scones with a biscuit/scone cutter.
- Scatter the tops of the scones with a little extra grated cheese and transfer them to the baking sheet.
- Bake for 10 to 12 minutes until they are well risen and very pale golden brown.
- Remove them from the oven and allow to cool slightly before splitting and spreading with Bungay Butter - and a slice of Baron Bigod if you so wish!
