Dulcie's Fen Farm Yoghurt Mayo

This is our Founder Dulcie's take on a mayo alternative - approved by lots of the team!
She never normally measures it out - so please do adjust as per your taste preferences.
It works wonderfully well in a sourdough tuna-mayo sandwich.
You'll need:
200g of our natural yoghurt
2-3 tbsp of olive oil
1-2 tsp Dijon mustard
1-2 tsp lemon juice and zest
A pinch of salt
Optional: garlic, a pinch of honey, white pepper or paprika.
Method: Stir the yoghurt until smooth. Add mustard, lemon (or vinegar) and salt. Slowly mix in the oil until glossy and lightly thickened. Taste and adjust — more oil for softness, more lemon or mustard for sharpness. Add any extras at the end.
